Yeast Risen Pizza base (using Keto Flour)
This is yeast risen pizza dough - just like the authentic Italian pizza without the carbs.
No mozzarella or gluten or chicken or cauliflower involved. Makes a large oven tray sized base, size depending on how thin you roll out the dough.
Macros: As a rough guide the whole oven tray of a base would be 4g net carbs - allowing you to go more crazy on toppings : ) perhaps even a few pieces of pineapple. Steady on there!
Ingredients (* = available here at Keto Store NZ)
3/4 cup Water
2 teaspoons + 1/4 teaspoon Active Dry Yeast*
1 teaspoon Sugar (it gets gobbled up by the yeast to make the base rise)
2 Tablespoons Olive Oil
1/4 teaspoon Garlic Powder*
189g -or- 2 Cups + 1/3 cup Keto Flour*
1 Tablespoon + 2 teaspoons Baking Powder*
Optional taste boosters/toppings
Tomato Powder - organic, much lower in carbs than any already prepared sauce.
Onion Powder - pure NZ grown, no fillers, use less for a better taste = lower carbs.
Nutritional Yeast Toasted - gently savoury 100% natural B vitamins = stress support
Cheese Powder - a blend of NZ cheddar, swiss, parmesan and gouda. Super tasty!
Equipment:
Stand mixer with a dough hook or mixing blade
Method:
YEAST ACTIVATION
1 - Into a stand mixer bowl add 3/4 Cup of warm water
2 - Dissolve 1 teaspoon of sugar in the warm water.
3 - Test the water using a digital thermometer
4 - When it is 43 degrees C add in the 2 teaspoons + 1/4 teaspoon of yeast and mix
5 - Cover and let it sit for 5 minutes for the yeast to activate
MAKE THE DOUGH
6 - Add 2 Tablespoons of oil and give it a quick mix
7 - Add these ingredients into the stand mixer bowl
1/4 teaspoon of garlic powder
2 Cups + 1/3 Cup of Keto Flour
1 Tablespoon + 2 teaspoons Baking Powder
8 - Mix in the stand mixer for approx 5 mins to create a dough
ROLL OUT TO FORM THE BASE
9 - spray a little water onto the kitchen bench and lay baking paper on top
10 - Remove the dough and place it onto the paper and place another sheet of baking paper on top
10 - Press the dough until it forms a large sized pizza base. Hint: you can make it as large as a tray that you will be using to bake it on. Then use a rolling pin to get the pizza crust as thin as you can. Remember it rises after this, so you can go really thin.
11 - Place into a warm spot for 30 minutes and allow to rise.
THIN & CRISPY
12 - If you like your pizza crispy: pre-bake the base 180C for 15 minutes.
TOPPINGS
13 - Decorate the pizza with sauce, cheese, toppings of choice.
options* Tomato Powder, Onion Powder and Nutritional Yeast Powder combined makes great keto pizza sauce. And Cheese Powder for that incredible flavour boost.
BAKE PIZZA
14 - Preheat the oven to 220 degrees Celcius
15 - Bake the pizza base and toppings for 15-20 minutes
The length of cooking time will vary as the thickness of the toppings matters, so check it at this time and continue to suit personal tastes.
