Ice-Cream Recipe (using Custard Pudding Casein + Yoghurt)
Dreamy Protein Enriched Ice-cream
This recipe has two protein sources, casein powder as well as added yoghurt.
Ideally made in a Ninja Creami machine, however an alternative is to leave it out to slight defrost before using a high speed blender.
When making ice-cream please remember that taste buds do not detect sweetness on really cold food, so overly sweet going in, is perfect for reasonably perfect tasting ice-cream to come out.

Ingredients (* = available here at Keto Store NZ):
120g Cream Powder*
400ml Cold Water
60ml of Liquid Alluose* OR 40 grams of Sweet as Icing Sugar Allulose*
1/4 teaspoon Guar Gum*
1 sachet of Muscle Nation Custard Casein Protein Powder*
(7 flavour options come in the Variety Pack)
OR
1 scoop from the Muscle Nation Custard Casein Protein Powder 1kg buckets*
(Banana, Vanilla, Strawberry and Double Chocolate) flavours.

High Protein Yoghurt
Optional to Mix In

Cocoa Soy Protein Crisps*
Dark Chocolate Chips*
White Chocolate Chips*
NZ Protein Marshmallows*

Equipment:
Blender to mix or Ninja Creami Machine used on Lite setting
If you don't own a Ninja Creami machine, you will have to experiment with whatever equipment you have.
Method:
1 - into a Blitzer, Blender or Ninja Creami pot, add 120gm of Cream Powder* to cold water.
2 - add 60ml of Liquid Alluose
OR
40 grams of Sweet as Icing Sugar Allulose* sweetener to taste.
TOP TIP: Avoid getting gritty hard to scoop ice-cream by using a Powdered Icing Sugar Allulose. It is the ONLY sweetener that fully dissolves in the time before freezing and most importantly Allulose does not crystalise or go hard and icy in ice-cream.
There is not an ingredient substitute that works as well as Allulose.
3 - add 1/4 teaspoon of Guar Gum
TOP TIP: Guar is a better ingredient for cold foods, Xanthan needs heat to activate, which you don't get happening from cold ice-cream.
4 - Add 1 sachet or 2 scoops of the Muscle Nation Custard Casein Protein Powder*

5 - Mix together in a blend using the lite Ninja Creami setting and put into the freezer to go solid.
6 - Add 1 Tablespoon of high Protein Yoghurt. Optional to mix in are

7 - Process in the Ninja Creami using the LITE setting to make your ice-cream, or slightly defrost and use a robust high speed blender.
