High Whip Egg White Powder - 200g or 500g

Did you know that there are two types of egg whites? Ones with ultra high gel strength and foaming abilities and those without. So when I heard that our egg white powder manufacturer innovated and figured out a way to specially select those super-powered egg pulps and make them into a high whip egg white powder - I was over the moon with excitement. Tall fluffy pavlovas and stable meringues are yum!  

You see, historically other suppliers add in triethyl citrate (e1505) to artificially improve the egg whipping or foaming abilities. So being able to have just 100% pure real super-powered strength eggs - and nothing else, no additives, no preservatives, nada. Well that just makes me super happy! 

Why does it matter - everything egg is better when it's fluffy + stabilised. 
Fluffy omelettes, super sized baking, pavlovas super-sized and stable, Lemon meringue pie, you name it. High whip just makes it ... higher, better texture, better performance.   

To get one large egg white, simply add 7 parts water to 1 part egg white powder and mix. The amounts and ratios to use for different size eggs are under the key measures heading below. And with the convenience of a long shelf life, egg white powder is way easier to manage than liquid egg whites from the supermarket which expire in a blink of an eye. 

Egg white is lactose and dairy free. The whites contain most of the protein in the egg, with no fat or cholesterol. They also typically contain less calories than other protein sources. It's a great way to get more protein in your diet without too many calories. 

Key Measures:  
• 1.5 teaspoons egg powder (weighs 4g) + 28ml of water = 1 Large size 7 egg white. 
• if those teaspoons are heaped (weighs 4.4g) + 31ml of water = 1 Jumbo size 8 egg white.
• 100g powder + 700ml water = 25 egg whites so in a 500g pack there are 125 large sized egg whites.
