Egg yolk powder is used to make egg noodles, a fast mayonnaise, ice-cream, hollandaise sauce and custard. The powdered form makes it super fast to make foods in situations where it's difficult to transport liquid eggs. I love the convenience of minimising food waste and it avoids scrounging for recipes to use up ingredients before they go off.

How many egg yolks per 100g? Dissolve 100g of egg yolk powder + 120ml of water to obtain approximately 220ml of liquid egg yolks (approximately 13 eggs)

How to use: To get one large liquid egg yolk, add 2 teaspoons of water to 1 Tablespoon of egg yolk powder. When egg isn't required to be handled separately in the recipe steps, add the egg yolk powder directly into dry ingredients and top up any wet ingredients in the recipe to make up for the additional liquid needed.
