Pure Egg Yolk Powder 

Egg yolk powder is used to make egg noodles, a fast mayonnaise, ice-cream, hollandaise sauce and custard. The powdered form makes it super fast to make foods in situations where it's difficult to transport liquid eggs. I love the convenience of minimising food waste and it avoids scrounging for recipes to use up ingredients before they go off.  

With the high price of free-range eggs, here's an option that's great value for money. In each 1 kg pack for $38 there are 130 egg yolks! Making each egg yolk 29 cents. That's unbelievably good value for your money.

How to use: To get one large liquid egg yolk, add 8g of egg yolk powder to 9ml water. Egg yolk powder can be directly added into the dry ingredients and then top up any wet ingredients in a recipe to make up for the additional liquid needed. 

How many egg yolks per 100g? Dissolve 100g of egg yolk powder + 120ml of water to obtain approximately 220ml of liquid egg yolks (approximately 13 eggs).
