Some say it's called impossible pie because it's impossibly easy to make. Others (much wiser) call it impossible because the batter separates during baking so you get this crispy top, a sponge style bottom and yummy custard filling layers. Either way the overall texture of this recipe is very similar-like a nice sponge pudding and it's literally mixing everything together at the same time and baking it. We love super tasty and super easy!

Ingredients (* = available here at Keto Store NZ)
4 large eggs (size 8)
350g Allulose*
125g Almond Flour*
1 teaspoon Baking Powder*
2 tsp vanilla extract or Vanilla Flavour It*
pinch of salt
250g Desiccated Coconut*
1 can coconut cream (about 480ml)
Recipe Method:
1 - Mix all the ingredients together well
2 - Pour the batter into a greased pie dish
3 - Bake at 170C for 50-55 minutes until the filling is set
4 - Let it cool, slice and serve.
