Protein Rocky Road using Protein Crisps

Crunchy, chewy, squishy Rocky Road - so many textures combine to deliver a pleasurable mouthful.  

Ingredients (* = available here at Keto Store NZ): 
2 packets Funday Sweets - either snakes, frogs, fruity bears - you're choice 
24 x Protein Marshmallows 
50gm Protein Crisps (regular or cocoa) 
200g White Chocolate Baking Bits
200g Dark Chocolate Chips / Milk Chocolate Baking Bits

Silicone mini muffin mold 

1 - Cut the Funday sweets into quarters and place 4 pieces into each mini muffin hole.
2 - Cut 24 Marshmallows and place 4 pieces into each hole
3 - Sprinkle 1 teaspoon of Protein Crisps of choice into each muffin hole
4 - Melt 200g White Chocolate in
the microwave for 30 seconds on low power at a time, stirring in between until fully melted. Take care to not get this too hot and pour over the ingredients in the mold
5 - Melt 200g Dark or Milk chocolate and pour over the remaining muffin holes 
6 - Leave it to set on the bench for an hour, then refrigerate for a couple of hours to set.
