Keto Chocolate Coated Marshmallows

These are SO Good and super simple to make.  Melt + Dip + Set + Enjoy!
Taste-wise, the combined result tastes exquisitely better than each component part.
And at only 0.2g carbs per marshmallow cube, there's a whole lot to love.

The 1st decision to make is if you prefer your chocolate to be white, milk or dark.
But don't worry, Keto Store have them all.  

Ingredients (* = available here at Keto Store NZ):
2 x 140g bags of Noshu Melts (maltitol free)* 
OR milk, white or dark sugar-free maltitol free chocolate of choice
1 x 200g packet of Marshmallows* 

Equipment:
 
Microwave safe container, teaspoon measure, fork, baking paper.  

Method: 

  1. Add your chocolate of choice into a microwaveable container.
    HINT: Cocoa butter based chocolate requires gentler tempering, google how to achieve this. Compound Chocolate requires heating at higher temperatures. 

    For every bag of Protein Marshmallows you will need approx 200g of chocolate.
    HINT: if you dip, set and then dip again and set, it makes for a much thicker surrounding of chocolate, so you may end up using more. 

  2. For every 100g of chocolate, you'll need to add 1 teaspoon of neutral tasting oil.
    Hint: MCT Oil is amazing for this.  

  3. Heat in your microwave in 30 second bursts, stir with a fork, then repeat 2 times. This whole batch took 3 x 30 seconds. 
    HINT: Keep stirring until the chocolate starts moving freely.  

  4. Using a fork, lower the marshmallow into the chocolate mixture until the entire marshmallow is covered. 
    HINT: putting the mallow into and out from, the melted chocolate as well as gently banging / sliding the fork against the side of the container, all helps to reduce surplus chocolate.  

  5. Place the coated marshmallow onto a piece of baking paper to set.
    HINT: Should the chocolate in the microwave start to set or go really thick, put it back into the microwave for another 30 second burst. 
    DON'T FORGET to remove the fork : )  

Macros per piece
Will depend on the selection of chocolate and you'll need to figure out how many pieces of chocolate coated protein marshmallow weigh 100g once coated. 

Here's how to calculate:
Add the Carbs from 100g marshmallows to the Carbs value for the chocolate per 100g then d
ivide by the number of coated marshmallows that weigh 100g.  
Repeat the calculation for Protein, then Fat, Then Carbs. 

Protein Mallows macros are Energy 967kJ Protein 23.5g, Fat <0.1g, Saturated <0.1g, Carbohydrates 0.8g, Sugars 0.7g Sodium 153mg

Storage 
Isn't going to be a problem, more likely finding good hiding places for these!
Ideally stored in the fridge in the vegetable crisper so very few other people see / take them and devour them.
