Chocolate Chip Cookie Recipe (using Keto Flour)
Super easy, soft chewy chocolate chip cookies, this recipe makes 19 cookies, less than 1 carb per cookie.
Ingredients (* = available here at Keto Store NZ):
115g Melted Butter
1 egg
1/2 teaspoon Vanilla Flavour It* or 1/2 Tablespoon of Vanilla essence
1/8 teaspoon salt
1/4 cup Golden Brown Sugar*
1/4 cup Allulose*
1/4 cup Erythritol*
1 Cup + 1/4 Cup Keto Flour*
1/2 teaspoon Baking Soda*
3/4 cup Keto Store Dark Chocolate Chips* all the carbs in this recipe come from these, so the macros would depend on the type that you use. Keto Store Dark Chocolate Chips are only 2g per 100g.
Keto Flour Options
• At 0.3g carbs per 1/4 Cup is version 2.0 from 2023, available in 500g and 1.25kg bag sizes and while not tested for the presence of gluten, all the ingredients do not contain gluten.
• At 0.7g carbs per 1/4 Cup is the GF version from 2024, that has the psyllium husk added for ingredients where moisture control is required like breads and yeast risen food, available in a 500g bag size.

Method:
1 - Add all the ingredients to the mixing bowl - preferably liquids first then the dry ingredients
2 - Mix well, using hand mixer is fine, starting on a low speed.
3 - Shape into cookies, approx 2 tablespoons per cookie, flatten it slightly with your hand. As they won't spread on the tray, you can place them close to each other.
4 - Bake at 180 degrees C for 10-12 minutes
5 - Leave them on the tray to cool them down & they taste even better the next day.
