Batter - 4 batches in a Jar for less than the price of 3

This batter is amazing – it coats meat, fish, sausages, vegetables, fruit with a crisp, light batter that makes the food inside incredibly tasty. And bonus - buying it in the jar format enables you to get 4 batches for the price of 3. Or get it in a one batch batter mix sachet for convenience.

Instructions to make and use the Batter:
1 - In a bowl whisk 2.5 Tablespoons of the batter mix + 1 egg + 1 Tablespoon of fizzy water/low carb beer together vigorously for a good minute to remove any lumps and make a light creamy batter.
2 - Heat oil (olive oil works great) on a medium heat, test if the oil is hot enough by dropping a bit of the batter in. It should bubble like crazy.
3 - Really dry off whatever you are coating off with a paper towel and dunk into the batter, rolling until fully covered.
4 - Deep fry until the batter turns golden, turning it over as it cooks.
Hint: If you leave the batter sitting, whisk it 20 seconds before dunking again.
5 - Transfer to a paper towel to absorb any excess oil.

Uses for the batter
Battered Proteins: Battered Fish Fillets, Sweet and Sour Chicken Breast, Sweet and Sour Pork, Squid Rings, Crabmeat Fritters, and Tempura Shrimp. To make sweet and sour inspired meals, pair it up with authentic Thai Sweet Chilli Sauce.

Tempura Vegetables are a great option too, like Green beans, Broccoli, Eggplant, and Zucchini. Mock apple fritters using zucchini spiced with cinnamon and nutmeg are a taste sensation. For those with a higher carb eating regime, Kumara and Onion rings are amazing battered, as are banana or pineapple fritters.

Keto Fish n Chips
To make a complete battered fish and chips meal add Keto French Fries, made with either Almond Flour or the lighter style Coconut Flour.

Serving size One batch of this batter makes enough to cover 3-4 fish fillets depending on the size. If you are feeding more mouths, then we recommend making more batches up from the reusable and recyclable jar.

What are good keto oils/fat for frying?

A good oil or fat can withstand high temperatures without breaking down into toxic by-products, provides healthy fats and health benefits and is versatile across many keto meals. Here are four options ranked in order of the best in achieving the above three outcomes:
#1 - Extra virgin olive oil - best of the best for cooking as determined by new studies
#2 - Refined Coconut oil - odourless, flavourless and the cheaper type of coconut oil
#3 - Clarified butter (known as Ghee) - gives a satisfying buttery flavour with minimal risk of burning during high-heat cooking because the protein and lactose sugars have been removed.
#4 - Lard - is the cheapest cooking fat and you can make it yourself. Lay out bacon on a tray in the oven as you preheat it as this will render as much fat as possible. Once the bacon is cooked to the desired level of crispness, remove it from the tray and filter the rendered lard through a fine-mesh strainer.
