Ingredients: Allulose, Monkfruit (Luo Han Guo extract), Konjac (Glucomannan), Citric Acid. 

Allergens: None known. While it is processed on a site that handles soy, almonds, and sesame, everything humanly possible is done to segregate, schedule and sanitise to avoid cross contamination. Vegan, Keto, and all ingredients are naturally Gluten-free.

How long does the jam last?  We have erred majorly on the side of caution when we say 4+ months stored on the shelf in a cool, dark place and once opened, in the fridge for 6+ weeks. We still have jars tested that have lasted longer but it is dependent on a lot of factors mentioned below. Either way this is substantially better than chia seed options that only last one week in the fridge before quality reduces. 

Results from our testing show that we still have jam made shelf stable after 5 months, and a jar OK in the fridge after 8 weeks using lifestyle testing methods. For instance, getting eaten, multiple openings, leaving on the bench before going back in the fridge. It's a tough life testing sugar-free jam. But someone has to do it : ) We will continue 

What factors impact how long the jam lasts? 
While Jam made using this Sweet as Jam Setting Sugar has 3 ingredients that all act as natural preservatives, a lot of the preservation lifetime depends on: 
• the types of fruit chosen (we and our jam testers have used these fruits: boysenberry, plum, raspberry, orange and lemon marmalade and feijoa)  
• the sterilisation of the jars and
• also the lids as you need a good seal to keep air out of the jar.

What should I do if the jam hasn't set?  Our testers have reported when they didn't use a 1:1 ratio of fruit with this sugar, the marmalade didn't set. So they put an empty pot on the scales, hit the tare button. Emptied the jars back into the pot weighing the contents, deducted how much jam setting sugar they had previously put in. Added more of the sugar to get back up to a 1:1 ratio, stirred, heated and re-filled the jars. Then it set. The 1:1 ratio of fruit to this sugar is really criticial to having it set.   

What is a supplemented food? 
It's a food that's safe and suitable, created by combining a novel (new) food ingredient to existing food ingredients. Allulose has had the Generally Recognised As Safe status from the USA FDA for decades and millions of people are consuming it world-wide.  

Why do people prefer Allulose based sweeteners? Allulose has no after-taste and in food it enhances their taste with a soft texture. This Allulose supplemented with Monkfruit is low in calories and because not a lot of it makes it to your lower intestine, it causes way less after-effects. 

Impact on blood sugar: As a rare natural sugar Allulose is found in fruits such as kiwifruit, raisins and figs. The ingredients like Allulose, Monkfruit Extract and Konjac give a glycemic index of zero with minimal impact on blood sugar levels. Both sweeteners are natural, alternative sweeteners. These are not artificial sweeteners. 

Ratio to Fruit & Liquids in Jam or Marmalade recipes: This product has been specially supplemented so you can use an equal weight of Fruit Liquids to this As Sweet As Jam Setting Sugar. The end result will be the same level of sweetness as regular Sugar.
