Sugar free Jam Recipe

Simply add fruit and a bit of butter in with Sweet as Jam Setting Sugar and boil for 4 minutes. Pour into clean jars, leave to cool (typically overnight) and you'll have jam that has set beautifully. 

Jams created using this method will have a fresh fruit flavour and retain the natural colour of the fruit due to the short boiling time. 

The beauty of this recipe is that you can make as much or as little jam as you like. The magic is in the ratios. So just match each gram of fruit with a gram of Sweet As Jam Setting Sugar and for every 100g of fruit, add in 2g of butter to reduce any foaming. Bring to the boil and start the timer, so that the combined mixture boils for 4 minutes. 

Ingredients (* = available here at Keto Store NZ):
Fruit of your choice - measure this in grams
Equal amount of Sweet As Jam Setting Sugar
20g Butter per kg of combined Fruit and Jam Sugar weights

Equipment: 
Scales*  Masher   Pot   Timer   Plate   Spatula   Spoon  
Jars*  (be sure to sterilise jars either by washing in a dishwasher or by heating clean jars in an oven at 100C for 15 minutes) TIP: If you calculate macros, weigh your jars empty, so you can deduct their weight to figure out the grams of jam to calculate macros later on.

Method: 

1 - Slice fresh fruit or use frozen fruit and weigh it. Then use a masher to pulp it in a pot. TIP - If using frozen fruit, heat it gently to defrost it and use a masher to remove clumps before adding any other ingredients in.

2 - Weigh the same amount of Sweet As Jam Setting Sugar* as the weight of the fruit. Add to the pot of fruit and stir through to combine it. The sweetener uses a 1g sugar : 1g fruit ratio.

3 - For every 100g of fruit, add in 2g of butter to prevent foaming.  

4 - Bring to the boil, and start timing the boil for 4 minutes
TIP - use a spoon to remove excess foam if needed.

5 - To test, spoon some out onto a plate to cool down and then slide a upside down spoon through it. If the liquid wrinkles, then it's ready for a good set. 

6 - Bottle up, filling to the top rim to allow for shrinking while cooling.  
TIP - Put hot jam into hot jars to prevent cracking. 

7 - Allow to cool and store in a cool dry place.
