A legendary ingredient for its ability to thicken up any liquid with just a tiny amount to create gels. It has no flavour, so it tastes of whatever you add it to. It is also stable throughout a wide range of temperatures and pH. With Xanthan Gum, a little bit goes a long way!
Available in: 1 Tablespoon, 120g jar and 250g jar sizes.
Substitutes: Wherever you see a non-Keto recipe that has corn starch or arrowroot in it, you can substitute with xanthan gum, which is keto-friendly. Most recipes use half a teaspoon.
Function: Which one you'd use depends on what you're making: As a guide:
~ Cold dishes like ice-cream or pastry filling - Guar Gum
~ Acidic dishes like those with lemon juice, even if cold - Xanthan gum
~ Baked goods and hot temperatures - Xanthan Gum

Keto Recipes using this Keto Ingredient: Xanthan is a common food additive that you'll use in everything from sauces, gravies, dressings to baked goods. In most cases it's used as a thickening agent or stabiliser to prevent separation of ingredients.
To make it go into dishes with out lumps then mix Xanthan in with a bit of oil before adding it into your dish. That makes a smooth paste and is much easier to handle.
When using it, wait for a few minutes for the thickening to take place, all the while whisking or stirring continuously. If you are creating non-acidic ice-cream, fillings for pastries, yoghurt or any cold items, then using Guar Gum will give you a better result.
If it spills, sweep it up and try to remove as much as possible handling it dry. If you must use water, use cold water to clean it up because hot water makes Xanthan swell up and thicken hard really quickly!
