Breaded Chicken (using Keto Breading Mix)
With zero carbs, this breading mixture makes meat SO crispy and yet keeps the chicken super tender. Delicious.
# servings (make to suit however much you need to)
Ingredients (* = available here at Keto Store NZ):
2 eggs beaten with a fork
1/2 Cup of Breading Mix* to start (add more if you run out)
Equipment:
2 containers with a flat surface
Method:
1 - Start to heat oil in frying pan
2 - Pat dry the fish, chicken or meat you wish to cook
3 - In a flat container, beat two eggs
4 - In another flat container, place a layer of breading mix
5 - Dip each piece of meat first into the egg wash, then place into breading mix and coat well on all sides
6 - Cook in hot oil until done, and nicely browned
7 - Drain on a rack placed over paper towels
Tips to make and keep things crispy.
Have one hand for the wet, one hand for the dry - then you don't get yourself all breaded.
The oil needs to be up to temperature before adding food in. To test the temperature of the oil, either use a digital thermometer or you can drop a bit of the breading in and if it doesn't 'fizzle' around the edges, the oil isn't hot enough
Cook in batches to not overcrowd the pan as that keeps the heat more even and fries to perfection
You can test your perfect cooking timing after 5 minutes by slicing the first piece cooked in half, and check it's cooked all the way through.
Some items need 7 mins, some may need more depending on thickness
To avoid what you've already cooked from going soggy, place a rack on top of the paper towel to allow for continual air flow. Whenever you place cooked breaded items onto a paper towel, steam is trapped and that's what makes breaded food get wet and go soggy.
