This batter is amazing – it coats meat, fish, sausages, vegetables, fruit with a crisp, light batter that makes the food inside incredibly tasty. And bonus - buying it in the jar format enables you to get 4 batches for the price of 3. Or get it in a one batch batter mix sachet for convenience.
Instructions to make and use the Batter:
1 - In a bowl whisk 2.5 Tablespoons of the batter mix + 1 egg + 1 Tablespoon of fizzy water/low carb beer together vigorously for a good minute to remove any lumps and make a light creamy batter.
2 - Heat oil (olive oil works great) on a medium heat, test if the oil is hot enough by dropping a bit of the batter in. It should bubble like crazy.
3 - Really dry off whatever you are coating off with a paper towel and dunk into the batter, rolling until fully covered.
4 - Deep fry until the batter turns golden, turning it over as it cooks.
Hint: If you leave the batter sitting, whisk it 20 seconds before dunking again.
5 - Transfer to a paper towel to absorb any excess oil.
Uses for the batter
Battered Proteins: Battered Fish Fillets, Sweet and Sour Chicken Breast, Sweet and Sour Pork, Squid Rings, Crabmeat Fritters, and Tempura Shrimp. To make sweet and sour inspired meals, pair it up with authentic Thai Sweet Chilli Sauce.
Tempura Vegetables are a great option too, like Green beans, Broccoli, Eggplant, and Zucchini. Mock apple fritters using zucchini spiced with cinnamon and nutmeg are a taste sensation. For those with a higher carb eating regime, Kumara and Onion rings are amazing battered, as are banana or pineapple fritters.
