If I were to describe a deeply memorable Keto chocolate cake it would need to have a fluffy texture with a lingering rich chocolate taste. A cake that actually rises in the tin to meet the occasion it's made for. And when celebrating with cake, let's be honest, there's definitely a pressure to perform.
Not only does it need to look amazing but it has to deliver on the texture and taste too; there's no question about it - all three factors need to come to the party, before a cake can be called sensational. So here is Keto Store NZ's sensational Chocolate Cake recipe.
Ingredients: * = available here at Keto Store NZ
1 Cup Almond Flour*
2 Tablespoons Coconut Flour*
2 Tablespoons Golden Flaxseed Meal*
2 Tablespoons Whey Protein Isolate*
1/2 teaspoon Baking Soda*
1/2 teaspoon Baking Powder*
1/4 tsp Salt
1/2 Cup Boiled Water
1/2 Cup of sieved Cocoa Powder*
10 drops Liquid Monkfruit Chocolate*
2 teaspoons Vanilla Flavour It Inulin* or 2 teaspoons Vanilla Essence
150ml Olive Oil
3 large eggs
2/3 Cup Allulose*
2/3 Cup Powdered Erythritol*
Method:
1 - Into a large bowl goes in 1 Cup Almond Flour, 2 TBS Coconut Flour, 2 TBS Golden Flaxseed Meal, 2 TBS Whey Protein Isolate, 1/2 tsp Baking Soda, 1/2 tsp Baking Powder and 1/4 tsp Salt. Whisk to combine and set aside until step #9.
2 - Into a heat proof bowl goes 1/2 Cup boiling hot water, 1/2 Cup sieved cocoa powder, 10 drops of liquid monkfruit chocolate and 1 sachet vanilla inulin or 2 teaspoons vanilla essence. Stir to form a paste.
3 - Grease the sides of a metal baking pan and line with baking paper.
4 - Preheat the oven to 170°C and set up racks to allow the top of the cake tin to be in the middle of the oven.
5 - Into a large mixing bowl goes 150ml olive oil, 3 large eggs and beat on high 2 mins.
6 - While still beating, slowly add in 2/3 Cup Allulose & 2/3 Cup Powdered Erythritol.
7 - Keep beating until you have a pale light, fluffy batter like consistency.
8 - Lower the speed of the beater and using a spatula, add in the cooled down cocoa paste mixture from step #2.
9 - With the beater on slow, add in the rest of the dry ingredients from step #1
10 - Scrape down the sides of the bowl with a spatula to ensure all ingredients are incorporated.
11 - Pour mixture into the baking tin prepared in step #3
12 - Put the tin into the oven. The top of the tin should be in the middle of the oven.
13 - Bake for 40 minutes at 170°C, then try to jiggle the cake. If the middle moves, then it needs 5 more minutes. Keep testing it until a skewer comes away clean with a few sticky crumbs on it. The cake will continue to bake while it cools down.
14 - Keep it in the tin on a wire rack for 10 mins before easing the cake away from the sides with a spatula. Use the baking paper to lift out the cake onto the rack for cooling. The cooler the cake is, the easier it will be to handle.
Serving suggestions
Eat it as a warm pudding or leave it to cool if icing it. As per the photos, it can be dressed up or down to suit the occasion. Storage: This cake can be made ahead, - store in an airtight container in a cool place for 2-3 days or freeze for up to 3 months, wrapped in a double layer of cling film, followed by a layer of foil. Unwrap and defrost at room temperature for about 3 hours.
