I love Chicken but I don't like how flavourless Chicken soup can be, but that all changed when I had Tuscan Chicken Soup - the flavours are amazing and the chicken so tender and the broth has such a creaminess to it! This recipe is from Carolyn at "All Day I Dream About Food" and makes 6 simply delish portions for lunch or dinner.

Ingredients for 6 servings

- 2 Tablespoons butter or olive oil divided into 2 lots
- 680gm chicken thighs cut into 1.5cm pieces
- 1/2 teaspoon Himalayan Salt*
- 1/2 teaspoon Pepper
- 4 cloves Garlic
- 1 Tablespoon Tomato Paste* combine 1 TBS tomato powder with 3 TBS water.
- 1 teaspoon Organic Italian Seasoning*
- 4 Cups Chicken Broth*
- 230g cauliflower florets
- 22g spinach leaves
- 1/2 Cup cream
- 1/2 grated parmesan cheese
- 1/3rd Cup Chopped Sun Dried tomatoes (optional)

Creamy soups are always best served fresh or store in the fridge for up to 5 days
Reheat gently in a pot over medium low heat. I don’t recommend freezing soups that have cream in them, but you can certainly prepare the soup up to Step 6 and freeze at that point. Add the cream after the soup is fully heated through.
