Recipe Inspiration: Baked Oatmeal
Bet you didn’t know you could have Baked Oatmeal and stay Keto!
It takes the combination of coconut chips, almond flakes and collagen to make the ooohhhh Oats. Add brown sugar, maple and cinnamon and you've got the aaahhhh. Combine both and you've got a fantastic Baked Keto Oatmeal – so hmmmmm worthy good on a chilly morning. What’s more it keeps really well, so you can make up a batch on a Sunday and it will sort all your breakfasts or desserts for the week.

Ingredients for 8 servings

- 1 cup Coconut Chips*
- 1 cup Sliced Almonds*
- 1/3 cup Brown Sweetener*
- ¼ cup Collagen*
- 1 teaspoon Baking Powder*
- ½ teaspoon ground Cinnamon
- ½ teaspoon Salt
- ½ cup unsalted Butter melted
- ½ cup Cream
- 1 large Egg
1 teaspoon Maple Syrup* or Vanilla Essence
Preheat the Oven to 165 C and grease a 1 litre glass or ceramic baking dish.
In a food processor, pulse the coconut and almonds until they resemble flakes of oatmeal. Transfer to a large bowl.
Whisk in the sweetener, collagen, baking powder, cinnamon, and salt.
Add the melted butter, cream, egg, and maple syrup and stir until well combined.
Spread the mixture in the prepared baking pan and bake 20 to 25 minutes, until golden brown and the center is mostly set. It should jiggle just slightly when shaken.
Remove and let cool 10 minutes before serving.
