What does psyllium husk do in baking? Psyllium husk is used to retain moisture and help breads from becoming too crumbly. It acts as a binder, and it gives gluten free bread dough the elasticity, flexibility and extensibility it needs so you can actually knead and shape it without any problems. Use to crumb veges, chicken or beef schnitzel. 

Substitutes: if your recipe calls for psyllium husk powder and all you have is psyllium husks - then double (x 2) the amount of husks that you put in. 

Benefits and claims: It's an excellent source of fibre for your digestive system. It increases the bulk in your stool, an effect that helps to cause movement of the intestines. It also works by increasing the amount of water in the stool, making the stool softer and easier to pass. Psyllium, one type of bulk-forming laxative, has also been used along with a proper diet to treat high cholesterol.
