Keto Pasta (using Keto Flour)

There's nothing quite like fresh pasta and with the aid of a Pasta Machine, it's super fast and easy to whip up a batch of pasta - at only 3g net carbs for the entire lot. 

Ingredients (* = available here at Keto Store 
3 Eggs 
1 Tablespoon Olive Oil 
1/2 teaspoon Salt*
164g (2 Cups) of Keto Flour*
2 teaspoons of Baking Soda* for boiling the pasta in 

Stand mixer, Pasta Machine and Drying Rack 

1 - Add 3 eggs, 1 Tablespoon of Olive Oil and 1/2 teaspoon of Salt into the bowl of a stand mixer.
2 - Add 2 cups of Keto Flour (210 grams) and mix to form a dough. 
3 - Sprinkle a little bit of flour onto the working surface as well as your hands 
4 - Remove the dough from the stand mixer. 
5 - Flatten to form smaller parcels of dough that can pass through the pasta machine. 
6 - Press to flatten so that it's not sticky, not cracked and formed well 
7 - Flour both sides of the dough 
8 - Take a piece of the dough and run it through the lasagna flat roller part of the pasta machine. This will make a solid long thin piece of dough. 
9 - Flour both sides of the freshly made pasta sheet
10 - For lasagna, cut rectangle pieces of thin dough. For spaghetti or fettuccine process the sheet through the cutting parts of the pasta machine. 
11 - Once cut, hang the pasta over a drying rack. 
12 - Fill a large pot with water and 2 teaspoons of baking soda and bring it to the boil
13 - Place the noodles (approx half the batch) into the boiling water separating them carefully with a fork
14 - Boil for 2 minutes, stirring to make sure the noodles don't stick to each other. 
15 - Drain the water off using a colander + serve with your favourite pasta sauce + meat.
