~ Full Size Keto Oven Bread Loaf Recipe (using Keto Flour)
Oven Baked White Bread - Recipe
Mixed, poured and oven baked without the need for proving. This recipe the Keto Flour mix to make bread that is soft, rises and toasts really well. Just like normal white bread, just ketofied. Suitable for oven baking only.
This recipe creates: one whole loaf of bread by a simple mix, pour, bake and slice, There's no need to spend time kneading or proving the dough.
Ingredients (* = available here at Keto Store NZ)
164g / 2 Cups Keto Flour mixture*
2 Tablespoons Baking Powder*
1/4 teaspoon Salt*
1 Cup + 2 Tablespoons warm temperature Water
2 Tablespoon Avocado or light tasting Oil
1/2 Cup or 4 egg whites or 16g egg white powder + 118ml water
Optional ingredients to get yeast flavoured bread
Add 1 Tablespoon of Active Yeast* and 1/2 Tablespoon of sugar - rest the dough for 10 mins to activate.
Optional ingredient to get a slightly darker crust
Add 1 Tablespoon of Allulose*
*Keto Flour Options
• At 0.3g carbs per 1/4 Cup is version 2.0 from 2023, available in 500g and 1.25kg bag sizes and while not tested for the presence of gluten, all the ingredients naturally do not contain gluten.
• At 0.7g carbs per 1/4 Cup is the GF version from 2024, that has the psyllium husk added for ingredients where moisture control is required like breads and yeast risen food, available in a 500g bag size.
Equipment: Bowl, Bench or Hand Mixer, Spatula
Baking Paper and Large Bread Loaf Tin 8.5"x4.5"
Rack for cooling the bread down so it doesn't condensate and go too soggy.
Method:
1 - Line your loaf tin with baking paper
2 - In a bowl add 2 Cups Keto Flour, Baking Powder and Salt, whisk to mix
3 - Microwave room temperature water for 45 seconds to get luke warm water
Optional step to get yeast flavoured bread
Add 1 Tablespoon of Active Yeast* and 1/2 Tablespoon of Sugar or Inulin* to the water + rest it covered for 10 mins to activate.
4 - Pour in the water, Oil and Egg Whites* and mix with a hand or stand mixer.
Optional add 1 Tablespoon of Allulose* to have a slightly darker crust.
6 - Mix all the ingredients together for approx 5 mins until light and fluffy
7 - Spatula the mixture out of the bowl into the loaf tin
8 - With a wet spatula, smooth down the top
9 - Using the back of a knife to score 3 lines across the bread
10 - Bake at 180 C for 50 minutes, cool on a rack
