Microwaved White Bread - Recipe

2 minutes in the microwave to make bread that is soft, rises and toasts really well. Make it the night before, let it cool on a rack overnight before cutting into toast or sandwich slices for the next day and you've got fresh bread made super quick on a daily basis.  

This recipe creates: 2 slices or 3 if you cut them thinner, depending on the size of the container used with a baking time in the microwave of minutes. 

Ingredients (* = available here at Keto Store NZ):
41g or 1/2 Cup Keto Flour mixture*  
1 tsp Baking Powder* 
1/4 Cup room temperature Water   
1 Egg 
1/4 tsp Yeast* to get that bread taste
Spray Oil or Butter for greasing the dish well

Keto Flour Options
• At 0.3g carbs per 1/4 Cup is version 2.0 from 2023, available in 500g and 1.25kg bag sizes and while not tested for the presence of gluten, all the ingredients do not contain gluten. 
• At 0.7g carbs per 1/4 Cup is the GF version from 2024, that has the psyllium husk added for ingredients where moisture control is required like breads and yeast risen food, available in a 500g bag size.

Equipment: Bowl and whisk to mix, Microwaveable dish (a square shaped one is best to make your preferred bread size) or oven proof dish if baking. Spatula for getting the bread out once done. Rack for cooling the bread down so it doesn't condensate and go soggy. 

Method: 
1 - In a bowl add 1/2 Cup Keto Flour* and 1 teaspoon of Baking Powder* into a bowl
2 - Add in 1/4 Cup room temperature Water, 1 Egg and mix well with a whisk to make like a cake batter.
3 - Spray the inside of a microwave proof or oven proof container with oil or butter really well
4 - Pour in the batter and with a wet spatula, smooth the top surface of the batter out. Whatever bumps you leave, will still be there after cooking.   
5 - Microwave on high for 2 minutes or bake in an oven at 180•C for 20-30 minutes.  
6 - With care because it's hot: Spatula down the outside of the container to free up the bread and tip it out onto a rack to cool down. 
7 - Once cooled, slice in half horizontally and eat like normal bread or toast it.
