Keto Weetbix - recipe below
Finally dairy-free, gluten-free, egg-free ketofied Weetbix loaded with healthy fibre.
Ingredients for 8 biscuits: (* = available here at Keto Store NZ)
117g or 1 Cup Brown or Golden Flaxseed Meal*
70g or 1/2 Cup Coconut Flour*
30g or 3 teaspoons Monkfruit Erythritol or Allulose
13g or 1 Tablespoon Baking Powder*
5g or 1 teaspoon Salt
450ml / 2 Cups Sparkling Water
Recipe Method:
1 - Grease and line a 9x9 inch baking dish
2 - Preheat the oven to 95 degrees Celsius - yes, only 95' as you're dehydrating more than baking this recipe.
3 - Mix all the dry ingredients together
4 - Add water and mix to form a dough
5 - Using a cheese grater, rub the dough against the slides of the grater to chop it into pieces or the use the slice side of the grater to cut it into thin sheets.
6 - Use a fork to place the grated dough into the corners of the baking dish and make it even. Then use a spatula to slightly smooth over the top of the biscuits to make it more like a regular weetbix biscuit
7 - Bake for one hour and turn the temperature of the oven down to as low as possible. Hint: even just having the oven light switched on is enough to dehydrate your weetbix for 3 hours.
How to eat it: use it in any recipe that calls for Weetbix or pour hot milk of choice over 2 biscuits in a bowl.

Storage:
As this is a baked then dried product it contains very little moisture, so will keep well in an airtight container in the pantry.
