Keto Marshmallows Recipe
So squishy. There's something just so magical about Keto Marshmallows. All the squish without the pure sugar craziness.
Recipe makes 24 pieces
Ingredients (* = available here at Keto Store NZ):
1/3 Cup Water
2 Tablespoons Gelatine Powder*
1/2 Cup Water
1 Cup Vallulose - Allulose*
1 teaspoon sugar-free Vanilla Extract
Pinch of salt
Stand mixer, Saucepan and having a digital thermometer* is really handy.
1 - Line a baking dish - 28 x 18cm with baking paper
2 - Sprinkle Gelatine powder into mixing bowl of a stand mixer
3 - Add 1/3 Cup of water and leave to bloom / soak for a few minutes.
4 - Place the allulose and 1/2 Cup Water into a saucepan on medium heat, stir and heat up.
5 - Shake and tilt the saucepan if needed, to fully dissolve the Allulose*.
6 - Cook 2 to 3 mins - 100c if you have a digital thermometer*
HINT: Work quickly to keep the liquid hot, pour into the bowl, keeping it off the sides so it doesn't cool down before reaching the gelatine.
7 - Turn the stand mixer on low to break up the mixture.
8 - Increase speed and whisk for 10 - 12 minutes.
9 - Add salt half way through and vanilla a minute or 2 before it's done.
10 - When it's done it will be fluffy and stiff.
11 - Turn the stand mixer off and quickly spread into lined dish. It solidifies, so work quickly.
12 - Let is sit overnight until cutting it with a wet knife
Storage: away from pets in the fridge.
