Keto Bagel Recipe (using Bamboo Fibre & Mozzarella)

Ingredients (* = available here at Keto Store NZ):
3/4 Cup Bamboo Fibre*
2 teaspoons Baking Powder*
3/4th teaspoon Xanthan Gum*
340 grams shredded Mozzarella cheese
2 large Eggs
Olive Oil or cooking spray

Optional seasonings of choice

Black Sesame Seeds*
White Sesame Seeds*
Poppy seeds*
Everything but the Bagel seasoning*
Bacon seasoning*

1 - Preheat oven to 180° C
2 - In a small bowl combine the Bamboo Fibre, Baking Powder and Xanthan Gum together.
3 - In a microwave safe bowl, melt the mozzarella cheese by microwaving in 30 second intervals. After each interval, remove the cheese and fold it over. Microwave until cheese is melted and smooth.
4 - Take the dry ingredients bowl and easily knead in the ingredients into the softened cheese. Knead carefully, as Bamboo Fibre is a fine powder, it can get a bit messy if you're too rough or flick things over too quickly.
5 - While waiting for the melted cheese to cool down, beat the eggs in a small bowl. 
6 - Once the melted cheese has come down in temperature, add in the beaten eggs and mix until everything is well combined. Knead the dough for about two minutes to really get everything worked together.
7 - Take a knife or dough cutter and separate the dough into 8 parts.
8 - Roll each piece of dough into a long log about 8-10 inches long.
9 - Form the log into a circle overlapping the ends, then press down on the ends to join them together. Don’t worry about the ends sticking together firmly as the cheese will melt down and connect again during the baking process. The key here is to make sure the bagels hole is wide enough to still be a visible hole after it rises during baking.
10 - With an oiled pastry brush or cooking spray, lightly oil the keto bagels. Sprinkle your seasonings of choice on top of the bagels, gently pressing them into the dough.
11 - Bake in preheated oven 180 C for 20-25 minutes. Allow the bagels to fully cool, as they are best served cold.
