Flourless Buns Recipe (using Bamboo Fibre)
Low carb bamboo fibre flour buns: grain-free, gluten-free, nut-free, keto friendly and also diabetic friendly!
Bamboo Fibre is the star of the show here, being 95% dietary fibre and 5% moisture, it retains this aspect during baking, providing that soft crust as well as a soft structured texture inside that makes for perfect bread buns - and it has 0 calories and 0 carbs. Now that's epic!

Ingredients (* = available here at Keto Store NZ):
1/2 Cup Egg Whites (=4 Egg Whites OR 112ml water mixed with 16g egg white powder)
1/2 Cup room temperature water
1/4 Cup Olive Oil
2 Tablespoons Apple Cider Vinegar*
1 teaspoon Baking Powder*
1/2 teaspoon Baking Soda*
1/2 Cup Bamboo Fibre*
4 Tablespoons Psyllium Husk *
1 Tablespoon Sweetener*
1/2 teaspoon Himalayan Salt
Optional Toppings
Black Sesame Seeds
White Sesame Seeds
Poppy Seeds
Everything but the Bagel
Bacon Seasoning
Equipment:
Mixing bowl
Baking tray lined with baking paper
Method:
1 - Lightly mix Egg Whites, Water and Olive Oil, no need to froth the eggs.
2 - Add Apple Cider Vinegar, Baking Soda, Baking Powder and mix.
You’ll see the natural froth due to the vinegar and baking soda.
3 - Add Bamboo Fibre, Sweetener and Salt.
4 - Add Psyllium Husk and mix well.
5 - Make this into a dough and let it sit for 10 mins.
If at this stage your mixture isn't doughy enough, you can use Bamboo Fibre exactly like flour to add a little sprinkle in, to thicken up the dough.
6 - Cut the dough into as many portions of buns / sizes of buns that you desire.
7 - Use Bamboo Fibre to dust your work surface and roll the dough mixture into the shape of buns. Pat down the dough like a flat patty on baking paper on a baking tray.
8 - Optional you can sprinkle sesame seeds, poppy seeds, or everything but the bagel on top.
9 - Bake it at 180 C for 45 mins - the buns should puff up sound hollow when tapped.
10 - Place the cooked buns on a wire rack to cool down, as that prevents moisture building up and making them go soggy.
