Ingredients (* = available here at Keto Store NZ):
Chicken and Marinade
1/3rd Cup Coconut Milk
1 TBS grated ginger
2 cloves crushed garlic
1 TBS Tamari
1 TBS Fish Sauce
1 teaspoon Turmeric
1 teaspoon Curry Powder
500g chicken breast (cubed)
Olive Oil for cooking
Peanut Satay Sauce
1/3rd Cup Satay Paste*
1/3rd Cup Water
Garnish with fresh herbs
Dill*
Parsley*
Coriander
Thai Sweet Chilli Sauce* and
Black sesame seeds*
This meal goes amazing with Qetoe Rice*
Equipment:
Skewers
Frying pan
Method:
1 - Combine all the ingredients in a medium sized bowl.
2 - Stir in Chicken until well coated and refrigerate for 30 minutes
3 - Thread the chicken pieces onto kebab skewers.
4 - Brush with Olive Oil and cook on the BBQ or frying pan 5-7 minutes or until all the sides are golden brown and cooked through.
5 - Using a fork, mix the Forty Thieves Peanut Satay Paste with water until smooth and creamy.
6 - Serve the chicken skewers with the satay sauce.
7 - Garnish with fresh herbs like dill*, parsley*, coriander, chilli and black sesame seeds*
Optional prepare the Qetoe Rice* as per instructions on the packet
