Cauliflower, Sausage and Cheese Soup Recipe below

With this cold weather we’ve been having I’ve been really craving soup! So I decided to
remake a recipe my Mum used to make for us, as low carb/keto…and it does not disappoint as it has all the flavor and texture of the original recipe, but with just a fraction of the carbs.

Serving size 6-8 portions

Ingredients (* = available here at Keto Store NZ):
20ml Olive Oil
1/2 an Onion, chopped
500g Frozen Cauliflower
3 x Frankfurters or 4 x Bier sticks, sliced (or any sausage of your choice)
750ml boiling water
2 x Chicken Stock Cubes
Salt and Pepper to taste
2 teaspoons each chopped Chives and Parsley
125ml Cream (made up with 15g Cream Powder* and 125ml water) 
125g grated strong cheese (optional Cheese Powder*)
Squeeze of lemon juice


1 - Fry the Onion in the oil until translucent.
2 - Add Frozen Cauliflower, Sausages of choice, Boiling Water, Chicken Stock cubes, Salt and Pepper, chopped Chives and Parsley and simmer over medium heat for about 20 minutes until the Cauliflower is soft.
3 - Blend the soup with a stick blender until its as smooth as you like.
4 - Add the Cream and Cheese and stir through.
5 - Simmer for another 5 minutes.
6 - Add the Lemon Juice, stir and serve or keep warm until serving.
