Thai Green Chicken Curry  

Ready in 20 minutes - An already made rich mix of fragrant green chillies, garlic, lemongrass and spices infused in creamy Coconut Milk and balanced by the sourness of kaffir lime. Just add chicken, eggplant, garnish and it’s ready to enjoy.

Ingredients (* = available here at Keto Store NZ):
Thai Green Curry Sauce 150g
Coconut cream 50g
60g Eggplant, diced into 2cm cubes
150g Boneless chicken thighs, diced into 2cm cubes
Garnish: Kaffir lime leaves, shredded

Method: 
1 - Heat a pan over medium heat.
2 - Add Thai Green Curry Sauce to the pan and bring to a boil.
3 - Add chicken, simmer on high heat until cooked through.
4 - Add eggplant, reduce heat and simmer for 15 minutes or until cooked.
5 - Garnish with kaffir lime leaves and serve with cauli rice.
