White Chocolate Chip Oat Fibre Muffins

If you are looking for a keto muffin that doesn't have coconut or almond flour, then check out these amazing muffins, made with Oat Fibre.  

Oat Fibre muffins are a perfect morning or afternoon snack and this base recipe can be combined with any of the flavour its range to be made into any flavour. You can't go wrong with chocolate chips though, don't skimp on the amount thou.

Ingredients (* = available here at Keto Store NZ):
60g or 1/2 Cup Oat Fibre 
1/2 teaspoon Xanthan Gum 
3/4 teaspoon Baking Powder 
3 Eggs 
1 Tablespoon Whey Protein Isolate (optional but really helps the texture)
2 Tablespoons Sugar Substitute 
2-3 Tablespoons Cream (or 1 Tablespoon Cream Powder + 3 Tablespoons warm water)
1 Tablespoon Vanilla (these need a lot of flavour) 
85g or 1/3 Cup Greek Yoghurt 
45g or 1/4 Cup Sugar Free Chocolate Chips (White or Dark or Milk) 

Equipment: 
Bowl, Lined Muffin Tin, Oven 

Method: 

  1. Mix all the dry ingredients together in a bowl, except the chocolate chips.

  2. Add in the wet ingredients and mix until the batter is smooth.

  3. Stir in the chocolate chips.

  4. Scoop into a lined muffin tin.

  5. Bake at 175°C for 20-25 minutes or until a toothpick comes out of the batter clean.

Tips and Hints: Oat Fibre holds seven times it's weight in liquid and when you bake with it, you need to be heavy handed on the flavourings. 
If you want more of a savoury scone for with gravy, then leave out the chocolate and you can add in seasonings to suit.
