Lemony Pork Meatballs in Tuscan inspired cream sauce

Pork mince is an affordable protein, and one that can be used very often. A quick and easy dinner is to make pork meatballs in a spinach, sundried tomato and cream sauce. Very, very tasty indeed.

Serving size - 2-3 portions

Meatball ingredients (* = available here at Keto Store NZ):
400g pork mince
3 confit garlic or 1 clove fresh garlic, finely chopped or 1/4 teaspoon of Garlic Powder*
1 Egg
3 Tablespoons Almond Flour*
2 teaspoons Lemon Juice
1 teaspoon each salt and pepper
25ml Olive Oil

Sauce Ingredients (* = available here at Keto Store NZ):
1 ½ cups defrosted frozen spinach (or use 1 teaspoon of Spinach Powder*)
2 Tablespoons chopped sundried Tomatoes
200ml cream (or use 24g Cream Powder + 200ml water*) 
Salt and pepper to taste


Method: 

1 - Mix all the meatball ingredients well and shape into 12-14 meatballs.
2 - Fry the meatballs in the Olive Oil until browned on all sides and almost cooked through.
3 - Add the spinach, tomatoes and cream, cover and simmer over medium heat for about 10 minutes.
4 - Serve over cauli rice or mash.
