~ Flourless Bread Loaf (using Bamboo Fibre)

This is a really easy to make bread loaf which turns out crusty on the outside, soft on the inside and to top that, it’s flourless & almost zero carbs due to the usage of Bamboo Fibre. 

Bamboo Fibre is the star of the show here, being 95% dietary fibre and 5% moisture, it retains this aspect during baking providing that lovely softness in texture that makes for a perfect bread - and it has 0 calories and 0 carbs. Now that's epic!

Ingredients to make one loaf (* = available here at Keto Store NZ):
1 Cup Egg Whites* (=8 egg whites OR 224ml water mixed with 32g egg white powder) 
1 Cup Warm Water 
1/2 Cup Olive Oil
2 Tablespoons Apple Cider Vinegar*
1 teaspoon Baking Powder* 
1/2 teaspoon Baking Soda*
1 Cup Bamboo Fibre*
1/2 Cup Psyllium Husk* 
1/4 Cup Egg White Powder* 
1/2 teaspoon Himalayan Salt* 
Optional Sweetener
1-2 Tablespoons of Powdered Erythritol* 

Equipment: 
Mixing bowl
Loaf pan lined with baking paper

Method: 
1 - Mix Egg Whites and Cup of warm water, add Olive Oil and Apple Cider Vinegar.  
     Give it a light mix, you don’t need to froth the eggs.
2 - Add Baking Powder and Baking Soda.
     When you start to mix, it’ll automatically froth up.
3 - Add Bamboo Fibre, whole Psyllium Husk and Egg White Powder.
     These will help the rise and texture of the bread.
4 - Finally add teaspoon Himalayan Salt and the optional sweetener.
5 - Give this a nice mix. It’ll be a soupy mixture and you have to continue to mix.
     Once the mixture turns into a thick dough-like texture, let it rest for around 10 mins.
6 - Take a loaf pan, add baking paper. Add the mixture and smooth it out across the loaf pan end to end. Make a little cut in the centre so it allows heat to release.
7 - Bake it at 180 C for 50 mins.

Your Zero Carb bread, Low Calorie bread is ready.
The only ingredient that has any carbs is the egg white 0.7g carbs for the whole loaf. Energy wise the most is Olive Oil and that's brand dependent.
Dietary fibre it's really high from Bamboo Fibre and Psyllium Husk.  
Cut thick or thin slices as desired and enjoy!
