Easy Creamy & Low Carb Seafood Chowder
This easy, creamy keto seafood chowder is a hearty low carb soup that you can make in less than 30 minutes. Ideal for using up vegetables, adding whatever seafood takes your fancy and giving it the flavour boosters from Old Bay Seasoning and Soup Mix.

Ingredients (* = available here at Keto Store NZ):
2 pieces of Bacon or 1 teaspoon of Bacon Seasoning*
1 piece of Celery chopped
2 Tablespoons Olive Oil, divided
1/2 Cup Scallops, frozen
1/2 Cup raw Shrimp, frozen
1/2 Cup of White Fish cut into inch x inch pieces
2 Cups of Water (+1/4 cup for Cauliflower Cream)
2 teaspoons of Old Bay Seasoning*
1 Tablespoon of Vegetable Soup Mix* / Vegetable Bacon Soup Mix*
3 Cups of Cauliflower Florets
2 cloves of Garlic, crushed
1 Tablespoon of Cheese Powder*
Optional Ingredients:
1/2 Cup Carrots, chopped
1/4 Cup frozen Corn
Other options to add are Mushrooms, Turnips or Radishes, any vegetable with low carbs works.

Soup pan
Microwave

Method:
1 - In a soup pan, add your bacon and cook. Once it is done, take out the bacon and set aside for a topping.
2 - Add 1 tablespoon of Olive Oil and the Celery (Carrots and Corn if using). Saute until the vegetables start to soften.
3 - Meanwhile add the Cauliflower Florets to a microwave steamer and cook for 5 minutes until fork tender.
4 - Mix the Vegetable Soup / Vegetable Bacon soup & Old Bay Seasoning with 2 cups of Water and pour over the Vegetables and then add in the Seafood.
5 - Bring to a simmer while you make the Cauliflower Cream.
6 - Pour the cooked cauliflower into a high speed blender along with 1/4 cup of water, 1 tablespoon of olive oil, the garlic and parmesan cheese. Blend until smooth and creamy.
HINT: Make the thickness of the cauliflower cream on the thick side, so when it gets added to the pot, it thickens the contents to make the soup a hearty texture.
7 - Spoon the cauliflower cream into the soup and mix well. Let it simmer for a few more minutes and it's done!
