Recipes and techniques for using this ingredient
The best way to melt this chocolate is to half fill a small saucepan with water and bring to a gentle simmer. Add the chocolate to a heat-proof bowl and place over the simmering water. Leave the chocolate to gently melt and then let it stand for one minute or so before stirring to form a smooth chocolate mixture. This is called tempering chocolate and google is your friend for further information about this.
Full powered heat sources are not kind and dry this chocolate out. If using a microwave, lower the power setting as much as possible, and melt in 20 sec, then 10 second bursts, stirring well in between so the melted chocolate covers the baking bits and avoids them drying out or the oil separating. It is recommended to melt using the stove top method above, as it will result in a better outcome.
How to best use in baking / decorating
These baking bits perform well in cookies or muffins, and even more baking bits can be placed on top of baking when it is straight out of the oven. This provides mouthfuls of deliciousness, right where you need it to look most fab.
It’s chocolate and for that matter, it's dark chocolate which is so very versatile.
Don't forget to have some set aside for the chef, consider it a baker’s tax :) Enjoy.
