~ Blueberry Custard Recipe (using Oat Fibre)
Blueberry Custard Pie / Bars / Slice
Crust, custard, blueberries, and a crumb topping make this Blueberry Custard your next favourite treat! Great warm, especially with some ice cream or whipped cream, but they’re also good cold.

Crust Ingredients (* = available here at Keto Store NZ):
81g Coconut Flour*
38g Golden Ground Flaxseed*
36g Oat Fibre*
23g Whey Protein Isolate*
1gm Xanthan Gum*
1 Tablespoon Keto Store Sweetener Blend*
1/4 teaspoon Baking Powder*
4 Tablespoons salted butter (at room temperature)
2 Tablespoons Greek Yoghurt or Sour Cream
Custard Ingredients (* = available here at Keto Store NZ):
1/2 Cup Cream (or 12g Cream Powder* and 125ml warm water)
2 Eggs
2 Tablespoons Oat Fibre*
3/4 teaspoon Vanilla Flavour It*
1 Tablespoon sweetener like Keto Store Sweetener Blend*
1/8 teaspoon Salt
Topping Ingredients (* = available here at Keto Store NZ):
3 Cups of Blueberries (Fresh doesn't colour your custard purple but taste-wise frozen work OK as well. Thaw and drain them and expect your custard to be purple).
OR substitute by adding a Blueberry Aeroplane Jelly* layer as a topping once cooked.
Equipment:
Whisk or Hand mixer, Bowl, Greased 9 inch pie plate or similar baking tin if making this into a slice or bar. Oven
Method:

Whisk the dry ingredients for the crust together.

Add the Butter and Greek Yoghurt or Sour Cream and mix with a hand mixer until crumbs form.

Set aside 3-4 tablespoons of crumbs for topping the custard and press the remainder into the bottom of a greased 9-inch pie plate.

Bake at 180°C for 7 minutes.

Meanwhile, with a hand mixer or whisk, mix the custard ingredients together: Cream, Eggs, Oat Fibre, Vanilla, Sweeteners and Salt.

Fold in the Blueberries gently into the custard mix with a spatula.

Pour the custard mixture onto the hot crust when it comes out of the oven using a spatula to distribute the blueberries evenly.

Top with the reserved crumbs.

Return the custard to the oven at 180°C for 23-25 minutes or until set.

Serve warm with ice cream or whipped cream, or refrigerate and serve cold.
Macros Nutrition Facts per serve of 16 calories per serving 82, Fat 5.6g, Protein 2.6g, Net Carbs 4.3g depending on how much fruit you use and this is much lower if you substitute some fruit with a sugar free jelly layer.
