Chocolate Rice Bubble Keto Treat - Recipe Below
Remember these from your childhood?! Guess what? ... Here's a keto version!!!
I like making these and taking them to school for a sugar-free option for kids young and older :) and often they devour them with no idea that they're sugar free because they have the same taste and texture as the original rice bubble one.
Macros for the finished treat will depend on what pork crackle you use, so the macros here are without the pork crackle. Net Carbs 1g, Fibre 2g, Protein 3g, Fat 29g, Energy 1186kJ.

Ingredients for 6 servings (* = available here at Keto Store NZ)
75-100g Plain Pork Crackle
1/2 cup Powdered Sweetener (73g)*
1 Cup Desiccated Coconut*
4 Tablespoons Cocoa Powder*
250g Coconut Oil melted
1 Tablespoon make your own Maple Syrup from Maple Extract
1 - Put Pork crackle in food processor and pulse to large crumbs about size of rice bubbles and put in a medium sized bowl.
2 - Add Cocoa powder, Powdered Sweetener and Coconut to the bowl and mix well.
3 - Warm coconut oil until just melted and stir in Maple Syrup.
4 - Add the wet ingredients to the dry ingredients and mix well
5 - Fill 12 paper muffin cups in a cupcake tray and set in the fridge until firm.
6 - Store in airtight container in the fridge
